Do I need to disassemble in order to fold?
No, you fold seat and back down, there is a pin below seat and back, pull pin out then it folds in half then put pin back in and that holds it together.
I'm a beginner starting exercise at home. When I get this at home, what will I need to do to start using the bench? Assembly? Folding, reclining?
The only thing that needs to be assembled on the bench is the footrest, which is very convenient.
Do you have to pull a cotter pin every time you want to close/open it?
Once the pin is secured, the bench cannot be folded. Remove the pin to quickly fold and store the bench.
what is the gap between seat and backrest?
1.5" when laying flat, closes up gap as you bring up back rest. When 90 angles - no gap.
I'm 6'1'' 300 lbs. Will this bench actually support my weight while lifting in decline position
I am 6'1'' 200 lbs. and haven't had any issues with stability at all. It's a well-put-together bench and it folds up nicely too. - From our user feedback.

Will this work for somebody who is 5'1''? Suitable for what heights?
Yes!

Can this be used for bench pressing with regular barbell bar and olympic weights ?
The Flybird bench can be used for bench pressing with a barbell, it may not offer the same level of safety and stability as a purpose-built bench press station. Users will need to take appropriate precautions during the excesise.
For heavier or more serious bench press training, a dedicated bench press rack or power rack may be a more suitable option.
